Christmas Holiday Soup Recipe

Delicious Vegetarian Corn and Potato Soup


  1. 3 Tbls. butter
  2. 1 leek chopped
  3. 2 garlic cloves, minced
  4. 3 Tbls. floor
  5. 1 carrot cut in squares
  6. 3 celery stalks cut in squares
  7. 1 pepper cut in squares
  8. 4 cups of corn kernals
  9. 6 cups low fat milk
  10. 4 large yellow potatoes cut into squares
  11. 1 cup of peas
  12. 5 Tbls. chopped basil
  13. salt and pepper to taste
  • Saute chopped leek and minced garlic till soft.
  • Add the flour and stir for 3 minutes.
  • Add the carrots, celery, pepper and corn while stirring.
  • Slowly add the milk stirring constantly.
  • Do not allow the milk to boil during any of the steps.
  • Add salt and pepper to taste.
  • Add the potatoes when the corn is nearly done.
  • Cook until the potatoes are well done. Yellow potatoes cook faster than Idaho potatoes.
  • Add the peas.
  • Stir in the chopped basil and serve warm.

Serving suggestions;

Serve this soup with left over turkey, chicken, ham, or prime rib sandwiches the day after Christmas, or as part of a special vegetarian Christmas meal.

This is one of our most special soup recipes. It is worthy to be part of a Christmas Holiday meal. We like to serve this to our guests that have come back for more than one cruise with Dawn on the Amazon.

I’m not a vegatarian but that looks really tasty.
